Vegan Banana Treat (Printer-Friendly Version)

# What You'll Need:

→ Base

01 - 1 teaspoon of baking soda
02 - 1¾ cups (210g) of spelt flour
03 - 1 pinch of salt that’s mineral-based
04 - ¼ cup (56ml) almond milk, if needed
05 - 4 small bananas (or 3 large ones) that are super ripe (1½-1¾ cups when mashed)
06 - ⅓ cup (75ml) of oil with a neutral taste
07 - 1 teaspoon baking powder
08 - ⅓ cup (75g) of organic cane sugar
09 - 1 teaspoon of vanilla extract

→ Optional Add-ins

10 - 1 teaspoon cinnamon
11 - ¼-½ cup of chocolate chips
12 - ½-⅔ cup of chopped-up walnuts

# Let's Cook:

01 - Set your oven to 350°F and let it heat up. Grease your loaf pan so it’s ready to go.
02 - Start by mashing the bananas in a medium-sized mixing bowl. Stir in your oil and vanilla. Add flour, sugar, baking soda, baking powder, and salt next. If the mix feels too dry, pour in the almond milk, but don’t overmix.
03 - Pour the batter into your prepared loaf pan. Place it in the oven and bake for 50 to 60 minutes. Use a toothpick to test if it’s done—if it comes out clean, your loaf is ready.
04 - Let your banana bread cool for about 10 minutes before cutting it into slices.
