Greek Salsa Fresh and Savory (Print Version)

# Ingredients:

01 - 1 1/4 cups diced cucumber
02 - 1 cup diced Roma or beefsteak tomatoes
03 - 1/2 cup diced red onion
04 - 1/4 cup sliced black olives
05 - 1 1/2 tablespoons lemon juice
06 - 1 tablespoon olive oil
07 - 1/4 teaspoon dried oregano
08 - 1/2 teaspoon dried dill weed or 1 teaspoon fresh chopped dill weed
09 - Salt to taste
10 - Pepper to taste
11 - 1/2 cup crumbled feta cheese
12 - Pita chips or pita wedges for serving

# Instructions:

01 - Combine cucumber, tomatoes, onion, and black olives in a large bowl.
02 - In a smaller bowl, whisk together lemon juice, olive oil, oregano, dill, salt, and pepper.
03 - Pour the dressing over the vegetables and toss well to combine. Refrigerate for 1 hour.
04 - Fold in feta cheese just before serving. Use as a dip with pita chips or wedges, or serve as a side dish with fish or chicken.
