Greek Chicken Meatballs Tzatziki (Print Version)

# Ingredients:

01 - 1 lb lean ground chicken
02 - 1/4 cup whole wheat panko crumbs
03 - 1/4 cup grated white or yellow onion
04 - 2 cloves garlic, minced
05 - 3 tablespoons fresh parsley, finely chopped
06 - Zest of 1/2 lemon
07 - 1 teaspoon dried oregano
08 - 1/2 teaspoon ground coriander
09 - 1/2 teaspoon cumin
10 - 1 pinch salt
11 - 1 pinch pepper
12 - 1 large egg
13 - 2 ounces feta cheese, crumbled

# Instructions:

01 - Preheat oven to 400°F (200°C). Line a baking sheet with aluminum foil and spray with non-stick cooking spray.
02 - In a large mixing bowl, combine lean ground chicken, panko crumbs, grated onion, minced garlic, chopped parsley, lemon zest, dried oregano, ground coriander, cumin, salt, pepper, egg, and crumbled feta. Mix well with clean hands.
03 - Form the mixture into 1-tablespoon sized balls and place on the prepared baking sheet.
04 - Bake for 12-15 minutes until golden brown.
05 - While meatballs are baking, prepare tzatziki by whisking together Greek yogurt, cucumber, dill, lemon juice, garlic, salt, and pepper to taste.
06 - Serve meatballs hot with tzatziki.
