Add the oil to a heavy-bottomed skillet or Dutch oven, about 2 inches deep. Heat the oil to 350°F to 360°F.

Fry the dough in batches, being careful not to crowd the skillet or Dutch oven. Fry each sopapilla for 1 to 2 minutes per side, just until golden brown. Remove with a slotted spoon or spider and place on a paper towel-lined plate.
