In a big bowl, beat together sugar and cream cheese using a hand mixer on medium until it’s all creamy and smooth.

Gently stir raspberries into the mix until everything is combined.

Carefully fold in the whipped topping. Wrap the bowl with some plastic wrap and pop it in the freezer for two hours to set.

Use a food processor to crush graham crackers into crumbs. If you’ve already got crumbs, just pour them into a small bowl.

Grab a cookie scoop (about 1 to 1.5 tbsp size) and scoop out portions of the mix. Roll each one around in the crumbs until they’re coated.

Place the crumb-coated bites on a tray lined with parchment or wax paper. Freeze for a couple of hours. Leave them out for 5 minutes before you enjoy them.
