Frozen Cheesecake Bites (Print Version)

# Ingredients:

01 - 1 and a half cups graham cracker crumbs
02 - 12 oz. fresh raspberries
03 - 16 oz. cream cheese, brought to room temperature
04 - 8 oz. whipped topping
05 - 1/3 cup white sugar

# Instructions:

01 - In a big bowl, beat together sugar and cream cheese using a hand mixer on medium until it’s all creamy and smooth.
02 - Gently stir raspberries into the mix until everything is combined.
03 - Carefully fold in the whipped topping. Wrap the bowl with some plastic wrap and pop it in the freezer for two hours to set.
04 - Use a food processor to crush graham crackers into crumbs. If you’ve already got crumbs, just pour them into a small bowl.
05 - Grab a cookie scoop (about 1 to 1.5 tbsp size) and scoop out portions of the mix. Roll each one around in the crumbs until they’re coated.
06 - Place the crumb-coated bites on a tray lined with parchment or wax paper. Freeze for a couple of hours. Leave them out for 5 minutes before you enjoy them.

# Notes:

01 - If the mixture starts to soften, toss it back in the freezer for a while.
02 - Using store-bought crumbs works just fine.
03 - Let the bites warm at room temperature for five minutes to soften slightly.
