Easy Fast Pho (Print Version)

# Ingredients:

01 - 1/4 teaspoon soy sauce.
02 - 1 cinnamon stick.
03 - 1/4 teaspoon hoisin sauce.
04 - 1 large yellow onion, roughly cut into four pieces.
05 - 8 ounces of dried rice noodles (vermicelli).
06 - 1/4 teaspoon red chili paste.
07 - 6 cups of stock (vegetable, chicken, or beef).
08 - Choice of meat or seafood: chicken, pork, steak, shrimp.
09 - 1/4 teaspoon ground coriander.
10 - 2 cups of water.
11 - Salt and pepper as needed.
12 - 2 pieces of ginger, cut lengthwise (2-inch size).
13 - 1 1/2 tablespoons fish sauce.
14 - Garnish options: cilantro, green onion, lime, bean sprouts, jalapeños, Thai basil.
15 - 1 small clove, if desired.

# Instructions:

01 - Mix your stock, sauces, spices, and water in the pot. Let it sit and bubble gently for 30 minutes.
02 - In a dry pot, sear ginger halves and onion quarters for about 4 minutes, stirring now and then.
03 - Boil noodles following package steps. Chop garnishes and set them aside in small bowls.
04 - Pop your protein into the broth right before serving. Let it cook 1 to 5 minutes until done.
05 - Toss aromatics. Spread noodles in bowls, pour the soup with meat on top. Add toppings to taste.

01 - Stock can be prepped beforehand and kept in the fridge.
02 - Using already-cooked meat saves time.
