Easy Beef Wraps (Print Version)

# Ingredients:

→ Burrito Seasoning

01 - 1/4 teaspoon cayenne (optional)
02 - 1/4 teaspoon ground black pepper
03 - 2 teaspoons each paprika and cumin
04 - 1 teaspoon each dried oregano, onion powder, salt

→ Beef Filling

05 - 2 garlic cloves, minced
06 - 1/2 a small onion, diced finely
07 - 500g or 1 lb lean ground beef
08 - 1/2 tablespoon olive oil
09 - 2 tablespoons of thick tomato paste
10 - 3 tablespoons water or broth

→ Assembly

11 - A handful of freshly chopped cilantro (optional)
12 - 6-8 soft, large tortillas (25cm/10"+)
13 - 3 cups cooked white rice (long grain preferred)
14 - 1 cup tender black beans
15 - 3 finely diced tomatoes with seeds removed
16 - 1 cup of fresh corn kernels
17 - 1 1/2 cups grated stretchy cheese
18 - 3 cups shredded iceberg or finely chopped cabbage
19 - 1/2 red onion, chopped small

# Instructions:

01 - Warm oil in a big pan, then sauté onion and garlic until golden. Toss in beef, break it up, and brown it. After that, mix in the seasoning, tomato paste, and water. Cook until a bit saucy—not dry. Let it cool for 10 minutes.
02 - If not reheating the wrapped burritos later, warm the tortillas first following package details.
03 - Spoon rice down slightly below the tortilla's middle. Add beef, lettuce, corn, black beans, onions, diced tomatoes, cilantro, and cheese on top.
04 - Fold the bottom edge up over the mixture, bring the sides in, and roll tightly. Wrap each in foil.
05 - Fry wrapped burritos in a dry pan over medium-high for a couple of minutes on each side. Or bake them at 180C/350F for 20 minutes until they're warm and slightly crisp.

# Notes:

01 - Stays freezer-friendly if you use cabbage instead of lettuce.
02 - Try adding extra vegetables when cooking up the beef filling.
03 - Tastes amazing served with salsa and sour cream.
