Drumstick Ice Cream Pie (Print Version)

# Ingredients:

01 - 12 sugar cones
02 - 6 tablespoons butter, melted
03 - 2 1/2 cups semi-sweet chocolate chips, divided
04 - 1/2 cup heavy cream
05 - 1 quart vanilla ice cream
06 - 6 tablespoons coconut oil
07 - 1/2 cup chopped peanuts

# Instructions:

01 - Process sugar cones in a food processor until finely ground. Mix crumbs with melted butter until thoroughly coated. Press mixture firmly into the bottom and up the sides of a pie plate. Place in freezer to chill.
02 - Heat heavy cream in a medium saucepan over medium heat until it just comes to a simmer. Remove from heat and add 1/2 cup chocolate chips. Let sit for 5 minutes, then stir until smooth. Let cool slightly, then spread over cold crust, extending it up the sides slightly. Chill in freezer for 30 minutes.
03 - Remove vanilla ice cream from freezer for 15 minutes to soften. Spoon softened ice cream into the pie shell, smoothing out and mounding slightly in the center. Place pie back in freezer to harden.
04 - Heat remaining chocolate chips and coconut oil in the microwave in 30-second intervals, stirring in between, until melted and smooth. Let cool slightly, but keep it liquid.
05 - Pour chocolate topping over hardened ice cream to cover completely. Quickly sprinkle chopped peanuts over the top before the chocolate hardens. Place pie in freezer until ready to serve.
