Party Appetizer Eggs (Print Version)

# Ingredients:

01 - 12 peeled, large hard-boiled eggs.
02 - 1/2 teaspoon of salt (kosher works best).
03 - A couple of twists of ground black pepper.
04 - 2 teaspoons of mustard.
05 - 1/2 cup of mayo.
06 - Optional: 1 tablespoon of pickle relish.
07 - Dash of cayenne pepper.
08 - Smoked paprika to sprinkle on top.

# Instructions:

01 - Cut the eggs lengthwise into halves.
02 - Gently scoop out yolks and place them in a medium bowl. Arrange the whites on a serving dish.
03 - Mash the yolks with a fork until they look like tiny crumbs.
04 - Combine mayo, mustard, salt, pepper, cayenne, and relish (if you’re using it) in the bowl. Stir until smooth.
05 - Move the filling into a plastic bag, squeezing it toward one corner. Snip off that corner and pipe the filling into the egg whites evenly.
06 - Give each one a light dusting of smoked paprika for the finishing touch.

# Notes:

01 - Take your time peeling so the egg whites stay intact.
02 - They’ll stay good for up to a day in the fridge.
