Cut the eggs lengthwise into halves.

Gently scoop out yolks and place them in a medium bowl. Arrange the whites on a serving dish.

Mash the yolks with a fork until they look like tiny crumbs.

Combine mayo, mustard, salt, pepper, cayenne, and relish (if you’re using it) in the bowl. Stir until smooth.

Move the filling into a plastic bag, squeezing it toward one corner. Snip off that corner and pipe the filling into the egg whites evenly.

Give each one a light dusting of smoked paprika for the finishing touch.
