                Stir together garlic powder with mayo and ketchup. Chill until needed.

                Peel the plantains by scoring the skin. Slice them into chunks about 1 1/2 inches and let them soak in salted water for 20 minutes.

                Dry the plantains, lightly coat with oil, and air fry at 350°F for 3-6 minutes on each side until they're soft.

                Press each fried piece until they're about 1/4 inch thick using a tostonera or similar press.

                Oil the plantain rounds, fry at 400°F in the air fryer for 3 minutes. Flip, oil again, and fry another 4 minutes.

                Sprinkle a little coarse salt on top and enjoy them while they're warm with your dipping sauce.
