Crispy Air Tostones (Print Version)

# Ingredients:

01 - 3 medium green plantains.
02 - 1/4 teaspoon garlic powder.
03 - 4 cups cold water.
04 - 1 cup mayo.
05 - 3 tablespoons neutral oil for cooking.
06 - 1/4 cup ketchup.
07 - Coarse finishing salt.
08 - 1 tablespoon kosher salt.

# Instructions:

01 - Stir together garlic powder with mayo and ketchup. Chill until needed.
02 - Peel the plantains by scoring the skin. Slice them into chunks about 1 1/2 inches and let them soak in salted water for 20 minutes.
03 - Dry the plantains, lightly coat with oil, and air fry at 350°F for 3-6 minutes on each side until they're soft.
04 - Press each fried piece until they're about 1/4 inch thick using a tostonera or similar press.
05 - Oil the plantain rounds, fry at 400°F in the air fryer for 3 minutes. Flip, oil again, and fry another 4 minutes.
06 - Sprinkle a little coarse salt on top and enjoy them while they're warm with your dipping sauce.

01 - You can prep the sauce up to two days ahead.
02 - Break it into batches if needed.
03 - These taste best when served right away.
