Set your oven to 450°F (230°C) and let it warm up.

In a skillet over medium-high heat, brown the beef until fully cooked. Add the taco seasoning and pour in the enchilada sauce. Let it simmer briefly, then take it off the heat.

Take a stack of corn tortillas, cover them in a damp paper towel, and microwave for 30–60 seconds so they're flexible.

Lightly coat one side of each tortilla with olive oil. Place them oiled-side down. On half of the tortilla, sprinkle 2 tablespoons of cheese, add ¼ cup of the beef mix, and top it with an additional 2 tablespoons of cheese. Then fold it to make a half-circle.

Put the folded tacos in a single layer onto your baking sheet. Bake them for around 16 minutes until they turn crispy and golden-brown.

Take them out and let them cool for 3 minutes. Top them with whatever you like and enjoy!
