Crispy Beef Tacos (Print Version)

# Ingredients:

01 - 10 corn tortillas
02 - 2.5 cups shredded Oaxaca cheese, Monterey Jack, or a Mexican blend
03 - 1 tablespoon olive oil
04 - 1 packet taco seasoning mix
05 - 1 pound ground beef, at least 90% lean
06 - ¾ cup enchilada sauce

07 - Lime wedges
08 - Guacamole
09 - Sour cream
10 - Pickled onions
11 - Salsa
12 - Hot sauce

# Instructions:

01 - Set your oven to 450°F (230°C) and let it warm up.
02 - In a skillet over medium-high heat, brown the beef until fully cooked. Add the taco seasoning and pour in the enchilada sauce. Let it simmer briefly, then take it off the heat.
03 - Take a stack of corn tortillas, cover them in a damp paper towel, and microwave for 30–60 seconds so they're flexible.
04 - Lightly coat one side of each tortilla with olive oil. Place them oiled-side down. On half of the tortilla, sprinkle 2 tablespoons of cheese, add ¼ cup of the beef mix, and top it with an additional 2 tablespoons of cheese. Then fold it to make a half-circle.
05 - Put the folded tacos in a single layer onto your baking sheet. Bake them for around 16 minutes until they turn crispy and golden-brown.
06 - Take them out and let them cool for 3 minutes. Top them with whatever you like and enjoy!

# Notes:

01 - Heat the tortillas properly, so they fold easily without crumbling.
02 - Try using a nonstick or ceramic tray to avoid sticking issues.
03 - If tacos won’t stay folded, use toothpicks to keep them in shape while baking.
