Crispy Salmon Bites (Print Version)

# Ingredients:

01 - 1 small clove of garlic, grated.
02 - 1/8 teaspoon of ground black pepper.
03 - 1 tablespoon of olive oil.
04 - 1/2 teaspoon of sea salt, coarse.
05 - Optional: 1-2 teaspoons of honey.
06 - 1/4 teaspoon sweet paprika or smoked paprika.
07 - 1/2 cup of creamy mayonnaise.
08 - 3 tablespoons of rice vinegar.
09 - 1.5 tablespoons of ketchup.
10 - 1/2-1 teaspoon of a hot sauce you like.
11 - 1 lb of center-cut salmon, chopped into 1-inch pieces.
12 - 1 tablespoon of coconut aminos.
13 - Green onions and sesame seeds for topping.

# Instructions:

01 - Dice the salmon into cubes, take the skin off, and mix it with salt, garlic powder, paprika, black pepper, honey, and olive oil.
02 - Lightly coat the air fryer basket with oil spray, add the salmon in a few batches, and fry them for 8 minutes at 350°F.
03 - Combine mayo, vinegar, garlic, hot sauce, ketchup, coconut aminos, and a pinch of salt in a bowl.
04 - Let the cooked salmon cool for 10 seconds before carefully taking it out.
05 - Place the salmon on a serving plate, sprinkle with sesame seeds and green onions, and enjoy with the sauce on the side.

# Notes:

01 - Baking the salmon at 400°F for 10-12 minutes is another option.
02 - Choose a center-cut piece of salmon for the best results.
03 - Letting the salmon cool slightly stops it from sticking.
