02 - A pinch of black pepper and salt
03 - Half a cup of freshly grated Parmesan
04 - 1 cup of finely crushed Italian-style breadcrumbs
05 - 2 large eggs, beaten
06 - 1 cup of regular baking flour
07 - 1 pound of tortellini stuffed with cheese (fresh or store-bought, refrigerated)
08 - Vegetable oil to fry with
09 - 1 teaspoon of garlic powder

→ For Serving

10 - A side of marinara sauce for dipping

# Let's Cook:

01 - Follow cooking instructions on the tortellini's package and boil them until they’re firm, but cooked through. Drain well and pat dry with some paper towels.
02 - Grab three shallow bowls. Put flour in the first one, whisked eggs into the second, and mix together Parmesan, breadcrumbs, and seasonings in the third bowl.
03 - Take each tortellini and cover it in flour, then dip into the egg bowl, and finally coat it completely in the breadcrumbs-Parmesan mix. Press gently so the coating sticks well.
04 - In a large skillet, heat oil until it’s at 350°F. Fry the tortellini a few at a time for 2-3 minutes on each side or until they’re beautifully golden.
05 - Place your freshly fried tortellini on paper towels to soak up extra oil. If you’d like, sprinkle some extra Parmesan on top. Serve warm with your marinara sauce.

# Cook's Notes:

01 - To enjoy them at their best, serve right after frying while still hot and crispy.
02 - This dish calls for fresh or refrigerated tortellini—don’t use the dry stuff.
03 - If leftovers lose their crunch, reheating in the oven will bring it back.
