Follow cooking instructions on the tortellini's package and boil them until they’re firm, but cooked through. Drain well and pat dry with some paper towels.

Grab three shallow bowls. Put flour in the first one, whisked eggs into the second, and mix together Parmesan, breadcrumbs, and seasonings in the third bowl.

Take each tortellini and cover it in flour, then dip into the egg bowl, and finally coat it completely in the breadcrumbs-Parmesan mix. Press gently so the coating sticks well.

In a large skillet, heat oil until it’s at 350°F. Fry the tortellini a few at a time for 2-3 minutes on each side or until they’re beautifully golden.

Place your freshly fried tortellini on paper towels to soak up extra oil. If you’d like, sprinkle some extra Parmesan on top. Serve warm with your marinara sauce.
