Crispy Parmesan Nuggets (Print Version)

# Ingredients:

→ Crust

01 - 1/4 teaspoon garlic salt
02 - 2 tablespoons parsley, freshly chopped
03 - 1/4 teaspoon kosher salt
04 - 1/2 cup melted butter
05 - 1 cup breadcrumbs, dry
06 - 1 teaspoon garlic, finely minced
07 - 1/8 teaspoon black pepper, ground
08 - 1 pinch Italian seasoning, dried
09 - 1/3 cup Parmesan, finely grated

→ Chicken

10 - 2 pounds chicken breast or thigh pieces, skinless and boneless, cut into bite-size chunks

# Instructions:

01 - Set your oven to 450°F and make sure the rack is in the middle slot.
02 - Take a paper towel and pat the chicken dry so the coating will stick better while cooking.
03 - Mix garlic into the warm butter in one bowl. In a second bowl, stir together cheese, parsley, breadcrumbs, and spices.
04 - Coat each chicken chunk in garlic butter first, then roll it around in the breadcrumb blend.
05 - Space chicken on a roasting pan. Pour any leftover butter on top. Roast for 15 minutes at 450°F, checking for 165°F inside.

# Notes:

01 - Dark pans will crisp the underside more.
02 - Chicken bottom will brown more than the top.
03 - If butter hardens on cold chicken, warm it back up gently.
