Crispy Falafel Airfryer (Print Version)

# Ingredients:

01 - 2 drained cans of chickpeas.
02 - 1 cup of tahini paste.
03 - Half a cup of mixed herbs like cilantro and parsley.
04 - 2 tablespoons of sesame seeds.
05 - 6 pieces of pita bread.
06 - 4 spoonfuls of olive oil.
07 - 1 garlic clove, peeled and smashed.
08 - 1 large shallot, diced roughly.
09 - 1/2 cup of plain Greek yogurt.
10 - Lettuce leaves as needed.
11 - One cucumber, sliced thin.
12 - Seasoning: 2 teaspoons cumin, 1 teaspoon paprika, and a teaspoon of salt.
13 - The juice of one fresh lemon.
14 - 1 ripe tomato, cut into slices.
15 - 3 spoonfuls of all-purpose flour.
16 - 1/2 thinly sliced red onion.
17 - Warm water (use as required).
18 - Non-stick cooking spray.

# Instructions:

01 - Combine the tahini, yogurt, lemon juice, and oil in a mixing bowl. Gradually stir in warm water until it reaches a smooth, spreadable texture.
02 - In a food processor, blend chickpeas, garlic, shallot, mixed herbs, seeds, flour, spices, lemon juice, and salt until you get a thick, uneven paste.
03 - Take portions of the dough and press into flat coins about an inch across. You should end up with 25 to 30 patties.
04 - Spray the inside of the air fryer lightly with oil. Lay the patties inside, ensuring no overlap. Cook for 8 minutes at 350°F, turn them over, and continue for 6 more minutes.
05 - Microwave the pitas for 15 seconds. Fill each with falafel, sauce, and plenty of fresh veggies.

# Notes:

01 - If frying, form into balls and cook in oil at 350°F for about 4 minutes or until golden.
02 - For a skillet method, fry the flat patties in a layer of hot oil for about 3-4 minutes each side.
