Crispy Cheesy Smashed Cauliflower (Print Version)

# Ingredients:

01 - 1 large head cauliflower, cut into medium size florets
02 - 3 tablespoons olive oil
03 - 3 cloves garlic, minced
04 - 1 ½ tablespoons preserved lemon paste
05 - ¼ cup grated Parmesan cheese
06 - ½ teaspoon paprika
07 - ½ teaspoon onion powder
08 - ½ teaspoon Italian herb blend
09 - Salt to taste
10 - Pepper to taste

11 - Lemon wedges
12 - Chives, chopped

# Instructions:

01 - Preheat your oven to 400°F (200°C).
02 - Add cauliflower to a large pot and cover the base with a few inches of water. Steam cauliflower for about 4-5 minutes, just until it’s soft enough to smash but still undercooked. Once done, drain and pat dry.
03 - Place cauliflower on a large sheet pan and very gently smash it with a large fork or your clean, gloved hands until it flattens slightly.
04 - Drizzle with olive oil, garlic, preserved lemon paste, Parmesan, spices, salt, and pepper. Toss to coat.
05 - Roast in the oven for about 25 minutes or until pieces start to look browned and crispy.
06 - Garnish with lemon wedges and chives before serving.
