Preheat your oven to 400°F (200°C).

Add cauliflower to a large pot and cover the base with a few inches of water. Steam cauliflower for about 4-5 minutes, just until it’s soft enough to smash but still undercooked. Once done, drain and pat dry.

Place cauliflower on a large sheet pan and very gently smash it with a large fork or your clean, gloved hands until it flattens slightly.

Drizzle with olive oil, garlic, preserved lemon paste, Parmesan, spices, salt, and pepper. Toss to coat.

Roast in the oven for about 25 minutes or until pieces start to look browned and crispy.

Garnish with lemon wedges and chives before serving.
