# Ingredients:

01 - 1 large head cauliflower, cut into florets
02 - 2-3 tablespoons (30-45ml) avocado oil, divided
03 - 1 teaspoon sea salt
04 - 1 tablespoon curry powder
05 - ½ teaspoon maple syrup (optional)

06 - Fresh cilantro
07 - Toasted almonds
08 - Tahini drizzle

# Instructions:

01 - Preheat oven to 450°F (232°C).
02 - Cut cauliflower into even-sized florets.
03 - Toss with 1 tablespoon oil, salt, curry powder, and maple syrup.
04 - Heat skillet with remaining oil until very hot.
05 - Sear cauliflower for 5 minutes until golden.
06 - Transfer to oven and roast for 10-15 minutes, stirring every 5 minutes until crispy.
07 - Garnish with optional toppings and serve immediately.
08 - Refrigerate up to 4 days. Not freezer friendly. Best served immediately.
