01 - 2.25 pounds ground beef
02 - 1 package rotini pasta
03 - 1 big block Velveeta cheese, cubed
04 - 1 (8 oz) block cream cheese, softened
05 - 1 can cream of chicken soup
06 - 1 can Rotel tomatoes with chilies, undrained

07 - 1 cup pasta water, reserved to thin the sauce

# Instructions:

01 - Cook the rotini pasta according to the package instructions. Drain and set aside, reserving 1 cup of pasta water if you prefer a thinner sauce.
02 - In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Once fully cooked, drain any excess fat.
03 - Reduce the heat to low. Add the Velveeta cheese, cream cheese, and cream of chicken soup to the skillet. Stir continuously until the cheeses are completely melted and the sauce becomes creamy.
04 - Stir in the can of Rotel tomatoes with chilies (undrained). Continue to cook for a few more minutes, allowing the flavors to meld together.
05 - Add the cooked rotini pasta to the skillet and toss everything together, ensuring the pasta is coated with the cheesy sauce. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.
