Marry Me Chicken Soup (Print Version)

# Ingredients:

01 - 1½ pounds of chicken (breasts or thighs), chopped into 1-inch bits.
02 - 1 teaspoon of olive oil.
03 - Salt and black pepper, as much as you like.
04 - 2 teaspoons of Italian herbs.
05 - A half cup of chopped celery.
06 - A half cup of diced carrots.
07 - A half cup of finely cut onions.
08 - A quarter cup of chopped sundried tomatoes.
09 - 3 cloves garlic, crushed.
10 - 1 cup fresh parmesan, finely grated.
11 - 1 cup heavy cream.
12 - A quarter cup of flour.
13 - 6 ounces of small pasta shells.
14 - 6-8 cups of good chicken broth.
15 - A quarter cup of tomato paste (optional).
16 - 3 big handfuls of fresh spinach.

# Instructions:

01 - Pour oil into your pot and warm it over medium-high heat. Toss in the chicken, sprinkle with salts, pepper, and the Italian herbs. Let it brown for about 5 minutes.
02 - Drop in your onions, celery, garlic, tomatoes, and carrots. Cook everything for around 4 minutes, or until they soften.
03 - Sprinkle in the flour while stirring it well. Mix in tomato paste if you’re using it. Gradually pour the broth in while stirring to mix it evenly.
04 - Turn up the heat to let it boil. Stir in pasta and adjust flavors to taste, then cover. Let it simmer for 20 minutes, so the chicken cooks and the pasta softens.
05 - Mix in the spinach, cream, and parmesan. Let it simmer another 5 minutes. Taste and tweak seasoning if necessary.

# Notes:

01 - Use less broth to start, add more if needed.
02 - Rotisserie chicken works here.
03 - You can cook the pasta in a separate pot.
04 - This can go in a slow cooker too.
