Creamy Baked Onions Asiago (Print Version)

# Ingredients:

01 - 4 large yellow onions, peeled and sliced into ¼-inch rounds
02 - Olive oil, for drizzling
03 - ½ teaspoon fresh thyme, chopped
04 - Salt and pepper, to taste
05 - 1 cup heavy cream
06 - 2 teaspoons Dijon mustard
07 - ½ cup Asiago cheese, grated

# Instructions:

01 - Preheat your oven to 450°F (230°C). Grease a baking dish, then arrange the onion slices in a single layer at the bottom. Drizzle the onions with olive oil, season with thyme, salt, and pepper. Roast in the oven for 20 minutes, until the onions start to soften and caramelize.
02 - While the onions are roasting, heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Stir in the Dijon mustard and half of the grated Asiago cheese, allowing the cheese to melt into the sauce.
03 - Pour the cream sauce evenly over the roasted onions. Sprinkle the remaining Asiago cheese on top, then cover the dish with foil. Return to the oven and bake for an additional 20 minutes, until the onions are tender, the cheese is melted, and the sauce is bubbly around the edges.
