Cranberry Apple Jello Salad (Print Version)

01 - 1 (20 oz) can crushed pineapple, undrained
02 - Juice and zest of 1 orange
03 - 2 (3 oz each) packages raspberry gelatin
04 - 1 (14 oz) can whole berry cranberry sauce
05 - 1 medium apple, finely chopped
06 - 2/3 cup chopped walnuts or pecans

# Instructions:

01 - Open the crushed pineapple and drain, reserving the juice. Pour the reserved pineapple juice into a 4-cup measuring container. Add orange juice to the pineapple juice, then add enough cold water to bring the total volume to 3 cups. Pour the mixture into a large saucepan.
02 - Place the saucepan over high heat and bring the liquid to a boil. Remove from heat immediately.
03 - Whisk in the raspberry gelatin until completely dissolved, approximately 2 minutes.
04 - Add the whole berry cranberry sauce and stir until well combined. The mixture should begin to thicken slightly.
05 - Transfer the mixture to a large bowl and chill in the refrigerator for 15-30 minutes, until slightly thickened.
06 - Stir in the crushed pineapple, chopped apple, orange zest, and chopped walnuts or pecans. Mix thoroughly.
07 - Pour the mixture into a serving bowl or mold. Chill for approximately 4 hours, or until completely firm. Serve and enjoy.
