Set & Forget Meal (Print Version)

# Ingredients:

→ Base

01 - 1 (14.5 oz) can of diced tomatoes
02 - 1 to 1½ pounds of boneless, skinless chicken thighs or breasts
03 - 1 teaspoon cumin powder
04 - 2 teaspoons of salt
05 - 1 cup of chicken broth (low-sodium)
06 - 2 teaspoons of chili seasoning

07 - 1 cup of uncooked brown rice
08 - 1 (15 oz) can of black beans (rinsed and drained)
09 - 1 cup frozen corn

→ Optional Toppings

10 - chopped cilantro
11 - shredded cheese
12 - hot sauce
13 - sauce like salsa
14 - avocado diced up
15 - green onions sliced up
16 - sour cream
17 - lettuce shredded

# Instructions:

01 - Put the chicken, broth, tomatoes, and spices into the slow cooker. Let it go on LOW for 3 to 4 hours.
02 - Toss in the rice, frozen corn, and drained beans. Keep on LOW for about 3–4 hours till the rice softens.
03 - Pull apart the chicken with forks. Mix it all together or keep them separate. Taste and tweak the flavors, then top as you like.

# Notes:

01 - Check rice here and there in the last hour.
02 - If it’s too dry, pour in a little extra broth.
03 - Use HIGH if you want to thicken it faster.
