Coffee Dessert Bites (Print Version)

# Ingredients:

01 - 1/2 cup cocoa powder.
02 - 8 oz mascarpone cheese.
03 - 1 tablespoon espresso powder.
04 - 1/4 teaspoon vanilla.
05 - 1/4 cup powdered sugar.
06 - 1 1/2 cups crushed ladyfingers.
07 - 1/2 cup chocolate chips.

# Instructions:

01 - Stir mascarpone, vanilla, powdered sugar, espresso powder, and crushed cookies until no lumps are left.
02 - Scoop some mixture and roll into balls with your hands. Put them in the fridge for half an hour.
03 - Warm chocolate in short microwave bursts and stir after each round.
04 - Roll the balls in cocoa or dip them into the melted chocolate.
05 - Lightly sprinkle extra cocoa on top and let them chill for 15 minutes to firm up.

# Notes:

01 - Cool it down if it’s too squishy to handle.
02 - Will stay fresh in the fridge for a week.
03 - Swap in vanilla wafers if needed.
