Coconut Pineapple Balls (Print Version)

# Ingredients:

01 - 1/4 teaspoon vanilla extract.
02 - 2 cups shredded coconut, split into two portions.
03 - 20 oz canned pineapple, crushed and drained.
04 - 1/4 cup powdered sugar.
05 - Extra coconut for coating.

# Instructions:

01 - Stir the pineapple, 1 cup of the coconut, the vanilla, and sugar until blended smoothly.
02 - Use a scoop to shape the mix into little balls.
03 - Cover each ball by rolling it in the extra coconut.
04 - Lay the balls on a lined tray, then refrigerate for an hour until they’re firm.
05 - Let them stay cold until it’s time to enjoy.

# Notes:

01 - Make sure the pineapple is drained completely.
02 - Refrigerate until they firm up.
03 - Store them in the fridge until serving.
