Slice peaches in half and remove the pits. Arrange them cut side up in the baking dish.

In a small bowl, mix the brown sugar, cinnamon, nutmeg, and salt. Stir in the melted butter, honey, and vanilla extract if using.

Spoon the cinnamon sugar mixture evenly over each peach half. Let sit briefly to allow flavors to soak in.
