Church Supper Hot Dish (Print Version)

01 - 1 lb ground beef
02 - 2 cups sliced peeled potatoes
03 - 2 cups celery, finely chopped
04 - 1/2 cup carrots, finely chopped
05 - 1/4 cup green bell peppers, finely chopped
06 - 1/4 cup onions, finely chopped
07 - 2 tablespoons butter or margarine
08 - 1 cup water
09 - 2 cans (10.75 ounces each) condensed cream of mushroom soup, undiluted
10 - 1 can (5 ounces) chow mein noodles, divided
11 - 1 cup shredded cheddar cheese

# Instructions:

01 - Preheat oven to 350˚F (175˚C). Grease a 2-quart baking dish.
02 - Brown ground beef in a large skillet over medium heat. Remove from pan and set aside.
03 - In the same skillet, sauté potatoes, celery, carrots, green bell peppers, and onions in butter over medium heat for 5 minutes.
04 - Add water to the skillet with the vegetables, cover, and let simmer for 10 minutes.
05 - In a large bowl, combine the cooked beef, cream of mushroom soup, and sautéed vegetables.
06 - Line the bottom of the greased casserole dish with half of the chow mein noodles. Spoon the beef and vegetable mixture on top of the noodles.
07 - Cover the casserole dish and bake in the preheated oven for 20 minutes.
08 - Sprinkle shredded cheddar cheese and the remaining chow mein noodles over the casserole, and bake uncovered for an additional 10-12 minutes.
