Add the chopped strawberries, plain Greek yogurt, honey, and vanilla extract to a large bowl. Mix thoroughly.

Place approximately 2 tablespoons of the yogurt mixture onto a parchment paper-lined baking sheet or large plate to form clusters. This will yield about 10 clusters.

Transfer the baking sheet to the freezer and freeze until the clusters are completely solid, about 1-2 hours.

Melt the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 15 to 30-second intervals, stirring in between, until fully melted.

Remove the frozen clusters from the freezer and dip each one into the melted chocolate using a spoon to ensure an even coating. Optionally, sprinkle with sea salt.

Place the clusters back onto the prepared baking sheet and freeze for a few minutes to harden the chocolate. Serve and enjoy!
