Choco Strawberry Love Cupcakes (Print Version)

# Ingredients:

→ Chocolate Cupcakes

01 - 1 cup gently measured all-purpose flour (125g)
02 - 1/2 cup natural unsweetened cocoa powder (42g)
03 - 1 teaspoon baking soda
04 - 1/2 teaspoon baking powder
05 - 1/2 teaspoon salt
06 - 1/3 cup vegetable oil (80ml)
07 - 1 cup white sugar (200g)
08 - 1 large egg, brought to room temp
09 - 1 teaspoon real vanilla extract
10 - 1/2 cup room temperature buttermilk (120ml)
11 - 1/2 cup freshly heated coffee or water (120ml)

→ Strawberry Buttercream Filling

12 - 1/2 cup dried strawberry pieces (12-13g)
13 - 1/2 cup softened unsalted butter (113g)
14 - 2 cups sifted powdered sugar (240g)
15 - 2 tablespoons heavy cream (30ml)
16 - 1/2 teaspoon pure vanilla extract
17 - tiny bit of salt

→ Chocolate Ganache

18 - 6 ounces finely cut semi-sweet chocolate (170g)
19 - 2/3 cup heavy cream (160ml)

# Instructions:

01 - Heat your oven to 350°F (177°C). Put paper liners in a 12-cup muffin tin and 3 more in a second pan.
02 - Mix the dry stuff in one container. In another bowl, stir together the oil, sugar, egg, vanilla, and buttermilk. Pour wet mix into dry mix, add the hot coffee or water, and stir until everything's combined.
03 - Pour batter into each liner about 2/3 full. Pop in oven for 20-22 minutes until they pass the toothpick test. Let them cool fully and chill for 20-30 minutes if needed.
04 - Put chopped chocolate in a bowl, heat cream and pour it over. Wait 2-3 minutes, then mix until smooth. Cool in fridge for 30 minutes to set up.
05 - Grind the strawberries into fine powder. Whip the butter, then gradually add sugar, strawberry powder, cream, vanilla and salt until it's light and fluffy.
06 - Scoop out middle parts of each cupcake, stuff with strawberry buttercream, and put the cut tops back on. Spread a thick dollop of ganache on each one.
07 - If you want, add fresh strawberry pieces or colorful sprinkles on top. Enjoy right away or keep covered until serving.

# Notes:

01 - The hot coffee makes the chocolate taste richer but won't make your cupcakes taste like coffee
02 - Always use the dried strawberries for filling - fresh or frozen won't work right
03 - You can make all parts a day before and put everything together when you need them
