01 - 1 cup unsalted butter, room temperature
02 - 1 cup powdered sugar, divided
03 - 1 teaspoon vanilla extract
04 - 2 1/2 cups all-purpose flour
05 - 1/4 teaspoon fine salt
06 - 1 cup mini chocolate chips

# Instructions:

01 - Preheat oven to 375°F and line two baking sheets with parchment paper. Set aside.
02 - In a bowl, beat butter and 1/2 cup powdered sugar until light and fluffy.
03 - Add in vanilla extract, mixing until well combined.
04 - Gradually add in flour and salt, mixing until just combined.
05 - Gently fold in the mini chocolate chips.
06 - Use a tablespoon-sized cookie scoop to portion out the dough. Roll each portion between your palms to form small balls.
07 - Arrange dough balls on a baking sheet, spacing them out evenly. Bake for 7 to 10 minutes, or until the bottoms are slightly brown.
08 - Remove cookies from the oven and, while still warm, roll them in the reserved 1/2 cup powdered sugar.
09 - Transfer cookies to a cooling rack before serving.
