Preheat oven to 375°F and line two baking sheets with parchment paper. Set aside.

In a bowl, beat butter and 1/2 cup powdered sugar until light and fluffy.

Add in vanilla extract, mixing until well combined.

Gradually add in flour and salt, mixing until just combined.

Gently fold in the mini chocolate chips.

Use a tablespoon-sized cookie scoop to portion out the dough. Roll each portion between your palms to form small balls.

Arrange dough balls on a baking sheet, spacing them out evenly. Bake for 7 to 10 minutes, or until the bottoms are slightly brown.

Remove cookies from the oven and, while still warm, roll them in the reserved 1/2 cup powdered sugar.
