Turtle Cookies (Print Version)

# Ingredients:

01 - 125g (1 cup) of plain flour.
02 - 28g (1/3 cup) cocoa powder without added sugar.
03 - A small pinch, about 1/4 tsp, of salt.
04 - 113g of butter, or 1/2 cup.
05 - 134g of white sugar (around 2/3 cup).
06 - A single large egg, separated.
07 - 2 tablespoons of milk.
08 - 1 tsp vanilla flavoring.
09 - Pecans, finely chopped—1 cup's worth.
10 - Caramel candies or pre-cut bits, 2/3 cup.
11 - Half a tsp of water.
12 - Optional: 2 oz semi-sweet chocolate for drizzling.

# Instructions:

01 - Stir together the flour, salt, and cocoa. Cream sugar and butter in a bowl until light. Add the yolk, milk, and vanilla bit by bit. Mix in the dry ingredients last.
02 - Place dough in the fridge for 60 minutes to harden up.
03 - Split dough into 20 little balls. Dip each into egg white and then pecans. Gently press a small well into the center of each ball.
04 - Bake in a 350°F oven for about 10-12 minutes. While warm, press the centers back down again.
05 - Warm caramels with water until melted. Fill each cookie's center with caramel. If you'd like, drizzle some melted chocolate over them.

# Notes:

01 - Dough or baked cookies stay good in the freezer for up to three months.
02 - Don't bake too long—they'll harden as they cool.
