Chocolate Banana Treat (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1 teaspoon baking soda
02 - 1/2 teaspoon salt
03 - 1 and 1/4 cups (156g) all-purpose flour, measured with the spoon and sweep method
04 - 1/2 cup (41g) unsweetened cocoa powder, natural variety
05 - 3/4 cup (135g) semi-sweet chocolate chips, plus 2 tablespoons (22g) extra for topping

→ Wet Ingredients

06 - 2 large eggs, at room temperature
07 - 1 and 1/2 cups (345g) mashed ripe bananas, around 3 large or 4 medium
08 - 1/4 cup (60g) plain yogurt or sour cream, both at room temperature
09 - 1 teaspoon pure vanilla extract
10 - 2 tablespoons (30ml) hot water
11 - 3/4 cup (150g) granulated sugar
12 - 1/2 cup (113g) unsalted butter, softened to the touch

# Instructions:

01 - Set your oven to 350°F (177°C) and coat a 9×5-inch loaf pan with cooking spray. Leave it aside.
02 - In a big bowl, stir together the cocoa powder, flour, baking soda, and salt. Toss in 3/4 cup chocolate chips too. Leave it aside.
03 - With a hand mixer or stand mixer’s paddle or whisk, cream the butter and sugar on high until the mix gets smooth and fluffy. Should take 2 minutes or so.
04 - While mixing on medium, drop in one egg at a time, blending well after each. Then stir in the yogurt, mashed bananas, and vanilla. Gradually add the dry ingredients and hot water while running the mixer on low. Mix until just combined—don’t overdo it since the batter’s meant to be thick.
05 - Scoop the batter into the loaf pan and even it out. Scatter the leftover chocolate chips on top. Bake for 60-65 minutes, putting foil on during the second half. It’s ready when a toothpick comes out mostly clean with a crumb or two.
06 - Take it out of the oven and let it cool in the pan for 1-2 hours on a wire rack. Then remove it and cut into slices.

01 - Store at room temperature for up to 5 days, or chill for up to 7 days
02 - Flavors really shine on day 2—it’s worth the wait!
03 - Freezes well for as long as 3 months
04 - Stick with natural cocoa powder, skip Dutch-process for this one
