Sweet Chili Salmon (Print Version)

# Ingredients:

01 - 2 tablespoons of lime juice, freshly squeezed.
02 - 1 bunch of scallions, finely chopped.
03 - A pinch of black pepper (1/8 teaspoon).
04 - 2-3 mint sprigs, fresh.
05 - 1 lime, in wedges.
06 - 1 tablespoon of olive oil.
07 - 1 tablespoon of grated fresh ginger.
08 - 1 1/2 pounds of salmon fillet, from the center cut.
09 - 2-3 handfuls of baby greens, mixed.
10 - 1 teaspoon of Sriracha sauce for some heat.
11 - 1/2 cup Thai sweet chili sauce.
12 - 2 teaspoons of soy sauce, low sodium works well.
13 - 1/2 teaspoon kosher salt for seasoning.
14 - 2-3 sprigs of fresh cilantro leaves.
15 - 1 tablespoon of lime juice for the greens.

# Instructions:

01 - Combine Thai chili sauce, Sriracha, lime juice, soy sauce, fresh ginger, and half your scallions in a bowl.
02 - Take out the pin bones, season with salt and pepper, and lay in a baking dish with 1/3 cup of the glaze under and over the salmon.
03 - Roast slowly for 18-23 minutes in an oven set to 275°F. Check for an internal temp of 130°F to know it's done.
04 - Mix baby greens with a drizzle of olive oil, a pinch of salt, some pepper, and a little lime juice.
05 - Lay salmon on the greens, sprinkle on the leftover scallions, fresh herbs, and lime wedges for garnish.

# Notes:

01 - You can prep everything two hours ahead.
02 - Works best using a center-cut piece of salmon.
03 - The salmon will keep cooking slightly after it's out of the oven.
