Chili and Eggs (Print Version)

# Ingredients:

01 - 1 pound fresh turkey breakfast sausage.
02 - 28 oz can of crushed fire-roasted tomatoes.
03 - 3-4 cups of beef broth, adjusted to your preference.
04 - 1 poblano or bell pepper, chopped into tiny pieces.
05 - 4 slices of center-cut bacon.
06 - 1 white onion, diced finely.
07 - 2 minced garlic cloves or use a grater.
08 - 1 packet of chili seasoning mix.

# Instructions:

01 - Place the bacon in a pot or Dutch oven on medium heat. Once cooked, move it onto a paper towel to drain.
02 - Toss in the onion and pepper, using the bacon grease left behind. Cook for a couple of minutes. Add garlic and cook just until you can smell it. Then throw in the turkey sausage.
03 - Crumble up the sausage and cook it all the way through.
04 - Pop in the rest of the ingredients. Chop the bacon and toss it back in. Heat the mixture until boiling, then lower it to simmer with a lid on for 45 minutes to an hour. Serve and enjoy!

# Notes:

01 - Enjoy it with fried eggs, hash browns, or bake eggs right on top.
02 - Top it with things like salsa, shredded cheese, avocado, yogurt, sour cream, or some tortilla chips.
03 - Ground chicken or pre-cooked turkey sausage crumbles make good swaps if you'd rather.
