Cheesy Potato Patties (Print Version)

# Ingredients:

01 - 2 cups breadcrumbs.
02 - ½ cup crumbled cooked bacon.
03 - 2 tablespoons minced parsley.
04 - 2 pounds of potatoes, peeled and cut into chunks.
05 - Salt and pepper as needed.
06 - 2 eggs, whisked.
07 - 1 cup finely shredded cheddar.
08 - 2 tablespoons chopped fresh chives.
09 - 1 garlic clove, finely chopped.
10 - 2 tablespoons butter.
11 - ¼ cup milk.
12 - 1 cup plain flour.
13 - Vegetable oil for frying.

# Instructions:

01 - Cook potato chunks in boiling water about 15-20 minutes till soft. Mash 'em with the milk and butter after draining. Let them cool down, and don’t forget to season.
02 - Combine bacon, cheese, herbs, and garlic in a bowl.
03 - Start with some mashed potato, flatten it, place a bit of filling in the middle, then fold and shape it into a patty.
04 - Give each patty a thin coat of flour, then dip it in the egg, and finally cover it with breadcrumbs.
05 - In hot oil, cook each patty a few minutes per side till they turn crispy and golden.

01 - Wait for potatoes to fully cool before making patties.
02 - You can get these ready in advance!
03 - Swap in other cheeses to change things up.
