Cut chicken into bite-sized pieces. Heat oil in a large pan over medium-high heat. Add chicken and taco seasoning; sauté for 4-5 minutes.

Add bell pepper, onion, and garlic to the pan; continue to sauté for another 5 minutes until chicken is fully cooked. Remove the mixture from the pan and set aside.

In the same pan, add 1/2 teaspoon oil, place a tortilla, top with a layer of cheese, 1/4 of the chicken mixture, and another layer of cheese. Fold the tortilla and cook on both sides until golden. Repeat with remaining tortillas.

Slice the quesadillas and serve with sour cream, salsa, guacamole, or your favorite dip.
