Cheesy Chicken Quesadillas (Print Version)

# Ingredients:

01 - 1 pound chicken breasts, cut into bite-sized pieces
02 - 1 tablespoon oil
03 - 1/2 cup diced bell pepper, any color
04 - 1/2 cup diced onion
05 - 1 medium jalapeno, diced, optional
06 - 2 cloves garlic, minced
07 - 1 tablespoon taco seasoning
08 - 2 cups shredded melting cheese
09 - 4 medium flour tortillas

# Instructions:

01 - Cut chicken into bite-sized pieces. Heat oil in a large pan over medium-high heat. Add chicken and taco seasoning; sauté for 4-5 minutes.
02 - Add bell pepper, onion, and garlic to the pan; continue to sauté for another 5 minutes until chicken is fully cooked. Remove the mixture from the pan and set aside.
03 - In the same pan, add 1/2 teaspoon oil, place a tortilla, top with a layer of cheese, 1/4 of the chicken mixture, and another layer of cheese. Fold the tortilla and cook on both sides until golden. Repeat with remaining tortillas.
04 - Slice the quesadillas and serve with sour cream, salsa, guacamole, or your favorite dip.
