Turkey Meatloaf Stuffed (Print Version)

# Ingredients:

01 - 2/3 cup diced mushrooms.
02 - 2 pounds ground turkey, lean.
03 - 1 cup shredded low-fat cheddar cheese.
04 - 1/3 cup tomato ketchup.
05 - 1 large minced shallot.
06 - 2 whole eggs.
07 - 2 tablespoons glaze ketchup.
08 - 3/4 cup breadcrumbs with seasoning.
09 - 1/2 teaspoon brown sugar for glaze.
10 - 1 1/4 teaspoon kosher salt.
11 - 2 teaspoons Worcestershire sauce for glaze.
12 - 1 teaspoon marjoram leaves.
13 - 1 ounce spinach leaves, fresh and chopped.
14 - 1 1/2 teaspoons Dijon mustard for glaze.

# Instructions:

01 - Set your oven to 350°F and grease a 9x13 pan with cooking spray generously.
02 - Cook the minced shallot in a bit of oil over medium heat until soft and slightly browned, about 2 to 3 minutes.
03 - In a small bowl, stir together all the glaze stuff until smooth. Leave it aside.
04 - In a big bowl, toss together the turkey, mushrooms, softened shallot, breadcrumbs, eggs, ketchup, salt, and marjoram.
05 - Blend the mixture by hand gently until it's all evenly combined.
06 - On a 12x16 piece of parchment, press the meat mixture into a rectangle that's about 10x12 inches.
07 - Cover the surface of the meat with a nice, even layer of shredded cheese.
08 - Spread the chopped spinach leaves evenly over the cheese.
09 - Starting from one of the short edges, gently roll up the meat using the parchment to help keep it together. Peel away the paper as you roll.
10 - Close the ends neatly and lay the roll seam-down in your dish that's been prepped.
11 - Pop it uncovered into the oven for 45 minutes to cook.
12 - Take it out and brush the glaze you made earlier all across the top and sides.
13 - Return the dish to bake for an extra 10 to 15 minutes, until it's fully done.
14 - Let the loaf cool off for 10 minutes before you cut it into pieces.
15 - Slice it up and enjoy while it's warm. Use a sharp knife to get cleaner slices.
