Set your oven to 350°F and grease a 9x13 pan with cooking spray generously.

Cook the minced shallot in a bit of oil over medium heat until soft and slightly browned, about 2 to 3 minutes.

In a small bowl, stir together all the glaze stuff until smooth. Leave it aside.

In a big bowl, toss together the turkey, mushrooms, softened shallot, breadcrumbs, eggs, ketchup, salt, and marjoram.

Blend the mixture by hand gently until it's all evenly combined.

On a 12x16 piece of parchment, press the meat mixture into a rectangle that's about 10x12 inches.

Cover the surface of the meat with a nice, even layer of shredded cheese.

Spread the chopped spinach leaves evenly over the cheese.

Starting from one of the short edges, gently roll up the meat using the parchment to help keep it together. Peel away the paper as you roll.

Close the ends neatly and lay the roll seam-down in your dish that's been prepped.

Pop it uncovered into the oven for 45 minutes to cook.

Take it out and brush the glaze you made earlier all across the top and sides.

Return the dish to bake for an extra 10 to 15 minutes, until it's fully done.

Let the loaf cool off for 10 minutes before you cut it into pieces.
