Soft Bread with Buttermilk (Print Version)

# Ingredients:

01 - 1 teaspoon baking powder
02 - ½ teaspoon kosher salt
03 - 1¼ cups mashed bananas (about 3 or 4 very ripe bananas)
04 - ⅛ teaspoon baking soda
05 - ½ cup (113g) butter, at room temperature
06 - 2 large eggs, warmed to room temperature
07 - 2 cups all-purpose flour
08 - 2 teaspoons vanilla extract
09 - 1½ cups (300g) white sugar
10 - ¼ cup buttermilk, also at room temperature

# Instructions:

01 - Set your oven to 350°F and preheat it. Then coat a 9x5-inch loaf pan with nonstick cooking spray.
02 - In a bowl, sift together the flour, baking powder, salt, and baking soda.
03 - In another bowl, use a fork to mash up the bananas until smooth.
04 - Beat the butter and sugar together for a couple of minutes until creamy. Crack in the eggs one at a time, mixing thoroughly each time. Then pour in the buttermilk and dash in the vanilla.
05 - Slowly stir the dry mix into the wet ingredients a bit at a time. Once combined, fold in the mashed bananas.
06 - Pour the batter into your prepared pan and bake for 65–70 minutes. It’s ready when a toothpick inserted in the middle comes out mostly clean.
