Chicken Burrata Pasta (Print Version)

# Ingredients:

→ Oven-Roasted Tomatoes

01 - 2 tbsp olive oil
02 - 10 oz grape or cherry tomatoes, cut in halves
03 - 3 cloves garlic, minced
04 - Salt and black pepper, for seasoning

→ Pasta with Chicken

05 - 2 large chicken breasts, about 1.5 lbs
06 - 1 tsp Italian herbs
07 - ¼ tsp salt
08 - 4 tbsp butter
09 - 1 Meyer lemon (or regular), thin slices
10 - 4 garlic cloves
11 - 2 tsp smoked paprika
12 - 2 tbsp olive oil
13 - 8 oz spaghetti noodles
14 - 8 oz creamy Burrata

→ Toppings

15 - ⅓ cup toasted pine nuts
16 - ½ cup fresh basil, finely chopped

# Instructions:

01 - Mix halved tomatoes with garlic, olive oil, and seasoning. Spread on lined baking sheet and roast at 400°F for 20 mins.
02 - Sprinkle salt, paprika, and Italian spices on chicken. Sear in hot oil for 5 minutes on each side. Let rest, then slice thin.
03 - In the same pan, cook garlic, lemon slices, and butter together until it smells amazing. Remove lemon from pan.
04 - Boil spaghetti and stir into the butter-lemon sauce. Layer pasta with sliced chicken, tomatoes, Burrata, basil, and nuts.

# Notes:

01 - Go for thin chicken slices for easier cooking.
02 - Don’t leave pine nuts unattended when toasting!
03 - Meyer lemons add sweetness, but regular ones are fine.
