01 - 2 boneless, skinless chicken breasts
02 - 2 tablespoons olive oil, divided
03 - 2 teaspoons Italian seasoning
04 - Salt and black pepper, to taste
05 - 4 medium tomatoes, diced
06 - 3 cloves garlic, minced
07 - 1/4 cup fresh basil, chopped
08 - 2 tablespoons balsamic vinegar
09 - 1/4 teaspoon red pepper flakes (optional)
10 - 12 oz penne or spaghetti pasta
11 - 1/4 cup grated Parmesan cheese
12 - Additional chopped basil and Parmesan for garnish

# Instructions:

01 - Cook the pasta according to package instructions. Drain and set aside.
02 - Season both sides of the chicken breasts with Italian seasoning, salt, and pepper. Heat 1 tablespoon olive oil in a skillet over medium heat. Add the chicken and cook for 6-7 minutes per side until golden and fully cooked through. Remove from skillet and rest for a few minutes before slicing.
03 - In a large bowl, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar, 1 tablespoon olive oil, and a pinch of red pepper flakes if using. Let this sit while the chicken rests to create a fresh bruschetta topping.
04 - In the same skillet used for the chicken, add the cooked pasta and toss it with the tomato mixture over low heat just until warmed through, about 2-3 minutes.
05 - Add the sliced chicken on top of the pasta and sprinkle with grated Parmesan cheese. Garnish with more fresh basil and Parmesan, if desired.
