Blackberry Bar Crumble (Print Version)

# Ingredients:

→ Crust

01 - 3 cups of all-purpose flour
02 - 1 cup of melted unsalted butter
03 - 1 teaspoon of almond extract
04 - ½ teaspoon ground cinnamon
05 - 2 large eggs
06 - 1 teaspoon of baking powder
07 - ¾ cup packed brown sugar
08 - ½ cup white sugar

→ Filling

09 - 4 cups of blackberries, frozen or fresh
10 - 1½ tablespoons of cornstarch
11 - ¼ cup white sugar
12 - 1 tablespoon freshly squeezed lemon juice

# Instructions:

01 - Heat your oven to 375°F. Coat a 9x13-inch baking pan with cooking spray, then line the base with parchment paper.
02 - Stir together the flour, melted butter, both sugars, cinnamon, and baking powder. Throw in the eggs and almond extract, and mix it all up thoroughly.
03 - Set aside 1½ cups of the crust mixture to use as a topping. Press what's left into the bottom of the lined pan.
04 - Mix the sugar, cornstarch, and lemon juice in a bowl until smooth. Gently fold in the blackberries, then spread this filling over the crust base.
05 - Scatter the reserved crust mixture over the fruit layer. Bake for about 40 to 45 minutes until nicely golden. Let it cool completely before cutting it into bars.

# Notes:

01 - You can go with either fresh or frozen blackberries here.
02 - Chunks in the crumble topping are better when they're a bit bigger.
