Beef and Rice Skillet (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil.
02 - 1 medium onion, chopped small.
03 - 1 lb ground beef, lean is best.
04 - 1 bell pepper, chopped.
05 - 2 garlic cloves, finely chopped.
06 - 1 cup long-grain white rice.
07 - 14.5 oz can diced tomatoes.
08 - 2 cups beef stock.
09 - 1 teaspoon dried oregano.
10 - 1 teaspoon paprika.
11 - Add salt and black pepper to suit your taste.
12 - Shredded cheddar cheese, about a cup (optional).

# Instructions:

01 - Warm up the oil in a large pan, season the beef, and cook it until it's browned all over.
02 - Throw in the garlic, onion, and bell pepper. Stir around for a few minutes until soft and fragrant.
03 - Add oregano and paprika, stirring them in well.
04 - Toss the rice into the meat and veggie mixture, making sure to coat every grain.
05 - Dump in the tomatoes and beef stock. Heat it up to a boil, then lower the heat.
06 - Cover the pan and let it gently cook for 18-20 minutes until your rice is nice and soft.
07 - Fluff it up with a fork, adjust your salt and pepper, and sprinkle on cheese if you'd like.

02 - Feel free to mix in extra veggies if you'd like.
03 - Cheddar cheese makes it extra tasty but isn't mandatory.
