Beef Cheese Tortillas (Print Version)

# Ingredients:

01 - 1/4 cup broth or water, beef preferred.
02 - 1 medium bell pepper, red, chopped.
03 - 2 tablespoons oil, olive works great.
04 - 1/2 teaspoon black pepper.
05 - 2 garlic cloves, finely chopped.
06 - 3 cups of shredded cheese, any kind you like.
07 - 1/2 teaspoon oregano, dried.
08 - 8 large tortillas, flour-based.
09 - 1 teaspoon ground cumin.
10 - 1 tablespoon of chili powder.
11 - 1 pound beef, ground.
12 - 1/4 teaspoon salt.
13 - 1 small onion, chopped finely.
14 - 1 small jalapeño, no seeds, diced small.
15 - 1 teaspoon smoked paprika.
16 - 2 tablespoons tomato paste, for flavor.

# Instructions:

01 - On medium heat, cook the beef with onion in some oil till browned.
02 - Add in garlic and both peppers, cook 3 minutes. Toss in the spices, stir for a minute.
03 - Mix in tomato paste and broth, let simmer a few minutes, stir till thick.
04 - Put beef and cheese on one side of each tortilla, then fold them over.
05 - Cook folded tortillas in a hot pan for a couple of minutes per side. Cheese should melt, and you'll see a golden color.
06 - Let them cool a moment before slicing, then serve with your favorite toppings.

# Notes:

01 - Prepare beef mixture in advance, it stores well.
02 - Cooking over medium heat gives best texture.
03 - You can hold them warm in a 200°F oven.
