Beef Barbacoa Wraps (Print Version)

# Ingredients:

→ Rice

01 - Juice from 1 lime
02 - 1/4 cup cilantro, finely chopped
03 - 1 cup of jasmine rice

→ Burrito Base

04 - 4 large burrito tortillas
05 - 1 cup black beans, rinsed and drained
06 - 16 oz cooked beef barbacoa

→ Toppings

07 - 1/4 cup fresh guacamole
08 - 1/4 cup sour cream
09 - 1 cup shredded lettuce (romaine)
10 - 1/2 cup fresh pico de gallo
11 - 1 cup of grated cheese

# Instructions:

01 - Follow the directions on the rice package to cook it, then mix in the lime juice and cilantro when it's done.
02 - Put the beef barbacoa in a skillet over medium heat. Cook for 3-5 minutes without touching it, then stir and cook another few minutes until hot.
03 - Microwave tortillas in a damp towel for 30-60 seconds until flexible, or toast them on a skillet for about 30 seconds per side.
04 - Add layers of rice, beans, beef, sour cream, guacamole, pico de gallo, cheese, and lettuce evenly onto each tortilla.
05 - Fold the ends of the tortilla over the filling, then roll them up tightly. Place them seam-down, cut in half, or wrap them in foil for serving.
