Apple Carrot Cranberry (Print Version)

# Ingredients:

→ Fruits & Vegetables

01 - 2 cups matchstick-cut carrots (buy precut for convenience)
02 - 1 granny smith apple, sliced thinly
03 - 1 red delicious apple, julienned
04 - 1 cup mandarin orange slices from a can, drained
05 - 1/4 cup finely chopped yellow onion

→ Dressing & Seasonings

06 - 2 tablespoons of fresh lemon juice
07 - 1/4 teaspoon ground pepper
08 - 1 tablespoon granulated sugar
09 - 1/4 cup mayonnaise
10 - 1/4 teaspoon table salt
11 - 1/2 cup of creamy vanilla yogurt

→ Mix-ins

12 - 1/3 cup of dried cranberries (sweetened)

# Instructions:

01 - Slice the apples thin and toss them in a little lemon juice in a small bowl. Mix well to coat evenly. Let them sit for 5 minutes so they don't turn brown.
02 - In a large bowl, toss in the carrots. Follow up by adding the cranberries and the chopped onion.
03 - After the apple slices have rested, toss them into the big bowl. Mix in the yogurt, mayo, salt, sugar, and pepper with everything else in the bowl.
04 - Give the salad a good stir, making sure it's all blended nicely. Finally, gently fold the mandarin slices into the mix.
05 - Cover the salad and leave it in the fridge for at least 3 hours before serving. Enjoy your dish!
