Amish Onion Cake Delight (Print Version)

# Ingredients:

01 - 3 to 4 Vidalia onions, chopped into 1-inch pieces
02 - 1/2 cup cold butter
03 - 1 tablespoon poppy seeds
04 - 1 1/2 teaspoons salt
05 - 1 teaspoon paprika
06 - 1 teaspoon black pepper

→ Batter

07 - 4 cups flour
08 - 1/2 cup cornstarch
09 - 1 tablespoon baking powder
10 - 2 tablespoons brown sugar
11 - 5 eggs
12 - 3/4 cup whole milk
13 - 3/4 cup sour cream
14 - 1 1/4 cups cold butter, cut into small pieces
15 - 1/4 cup melted butter

# Instructions:

01 - Preheat oven to 350˚F.
02 - Over low heat, sauté onions in 1/2 cup butter for 10 minutes. Add poppy seeds, salt, paprika, and black pepper. Stir to combine, then remove pan from heat and set aside.
03 - In a large bowl, mix flour, cornstarch, baking powder, and brown sugar.
04 - Cut in 1 1/4 cups cold butter to form a loose and crumbly dough.
05 - In a separate bowl, whisk eggs, milk, sour cream, and melted butter.
06 - Make a well in the dry ingredients and pour the wet mixture into the dry. Stir only until just combined.
07 - Pour the batter into a greased 10-inch springform pan. Top with caramelized onions.
08 - Bake for 35-45 minutes or until a knife inserted in the center comes out clean. Allow to cool for at least 5 minutes before releasing from the pan.
