Cube the eggplant into 1-inch chunks. Lightly sprinkle some extra kosher salt over them to bring out the liquid. Give it 15-30 minutes before patting them completely dry with paper towels.

Combine the eggplant pieces in a bowl with the avocado oil and all of the seasonings (thyme, rosemary, garlic powder, smoked paprika, and 1/4 teaspoon of kosher salt). Mix until every piece is coated evenly.

Start by setting the air fryer to 400°F. Lay the seasoned eggplant pieces in a single layer in the basket. Cook them for 18 minutes, giving them a good shake halfway through to make sure they fry evenly.

Dish out the eggplant while it's still warm and crispy. Serve it as a tasty snack or alongside your favorite main dish!
