Crispy Fried Eggplant (Print Version)

# Ingredients:

01 - 1 big eggplant, skin removed and chopped into 1-inch pieces
02 - 2 tablespoons of avocado oil

→ Seasonings

03 - 1 teaspoon of dried thyme
04 - 1 teaspoon of dried rosemary
05 - 1/4 teaspoon of kosher salt, plus extra to sprinkle
06 - 1/2 teaspoon of smoked paprika
07 - 1/2 teaspoon of garlic powder

# Instructions:

01 - Cube the eggplant into 1-inch chunks. Lightly sprinkle some extra kosher salt over them to bring out the liquid. Give it 15-30 minutes before patting them completely dry with paper towels.
02 - Combine the eggplant pieces in a bowl with the avocado oil and all of the seasonings (thyme, rosemary, garlic powder, smoked paprika, and 1/4 teaspoon of kosher salt). Mix until every piece is coated evenly.
03 - Start by setting the air fryer to 400°F. Lay the seasoned eggplant pieces in a single layer in the basket. Cook them for 18 minutes, giving them a good shake halfway through to make sure they fry evenly.
04 - Dish out the eggplant while it's still warm and crispy. Serve it as a tasty snack or alongside your favorite main dish!

# Notes:

01 - Salting the eggplant beforehand helps get rid of its bitter taste and makes it even crispier once cooked.
02 - For extra flavor, you can add some fresh herbs or a squeeze of lemon juice before serving.
