Air Fried Crispy Tofu (Print Version)

# Ingredients:

01 - 16 oz block of extra-firm tofu.
02 - 2 tsp soy sauce, low-sodium.
03 - 1 1/2 tsp rice vinegar.
04 - 1 large garlic clove, grated.
05 - 1 1/2 tsp sesame oil.
06 - 1 tsp fresh ginger, grated.
07 - 2 tsp sugar.
08 - 1 tsp Sriracha sauce.
09 - 1/4 tsp ground black pepper.
10 - 1/4 cup cornstarch for coating.
11 - Cooking spray for frying.
12 - Salt for seasoning, optional.
13 - Chopped scallions and sesame seeds to top off.

# Instructions:

01 - Lay tofu between some towels, weigh it down in a pan, and let it sit for 15 minutes to drain water.
02 - Combine soy sauce, sesame oil, rice vinegar, Sriracha, ginger, garlic, sugar, and pepper in a small bowl.
03 - Cut the tofu you pressed into 32 chunks, then toss them carefully in the marinade. Let them soak for 15 minutes.
04 - Take the tofu pieces and roll them lightly in cornstarch until they're evenly coated.
05 - Set your air fryer to preheat at 400°F, and spray the basket lightly with oil.
06 - Place tofu in the fryer basket in one layer. Spray lightly, cook 5 minutes, flip, spray again, and cook another 5 minutes until crispy and golden.
07 - Add a pinch of salt if you'd like. Sprinkle sesame seeds and scallions on top. Enjoy warm, and serve with a sauce if you want.

# Notes:

01 - Want dipping sauce? Double the marinade, and set part aside before tossing the tofu.
02 - Store your tofu in a sealed container in the fridge. It will keep fresh for up to 4 days.
