Spicy Garlic Bok Choy (Print Version)

# Ingredients:

→ Main

01 - 1 tablespoon neutral oil, like vegetable or canola
02 - 1 lb baby bok choy (or regular bok choy, cabbage, gai-lan, or yu choy sum)
03 - ⅓ cup water
04 - 8 garlic cloves, chopped finely

→ Spicy Sauce

05 - 1 tablespoon light soy sauce
06 - 1.5 tablespoons chili crisp or chili-infused oil
07 - ¼ teaspoon sugar
08 - 1 teaspoon sesame oil
09 - ½ tablespoon Shaoxing wine, dry sherry, or chicken stock

# Instructions:

01 - Cut the baby bok choy in half. Wash under cold tap water to remove dirt, then pat dry.
02 - Mix up the spicy sauce ingredients in a tiny bowl and leave it aside.
03 - On low-medium heat, warm up the oil in a big skillet. Stir the garlic for about 10 seconds till it smells great.
04 - Turn the heat up to medium-high. Toss in the bok choy and splash of water. Stir and cook for 2-4 minutes till it softens.
05 - Drizzle the sauce on top, toss to mix everything, then take off the heat and dig in.

# Notes:

01 - Swap bok choy with any other Asian greens if you like.
02 - Go for chicken stock instead of wine if avoiding alcohol.
03 - Add more or less chili oil to dial up or down the heat.
